I’ve always been a breakfast person, you know - getting up those 10 minutes earlier just to make sure I have time to drink coffee (because more often than not I just run around the house in the morning getting ready and before I know my once hot coffee is well ...far from hot) and prepare a nutritous meal that'll not only put me in the right mood for the rest of the day but also - especially during these colder months - will warm me up. And here comes the good ol’ porridge - my all-time favourite and a classic that truly ticks all the boxes.
THE EASIEST AUTUMN PORRIDGE
What you’ll need (the base):
Rolled oats *
Water or plant-based milk of choice
Mix of spices (cinnamon + nutmeg + ginger + allspice)
Sweetener - optional
Add-ins: chia seeds, seasonal fruit, crushed hazelnuts, a dollop of nut butter - you name it. My go-to are almond butter and berries with a teaspoon of maca powder to twist it up a bit!
* The oats/liquid ratio should be approx. 1:2 :)
Method
Put a pot with milk/water and spices on medium heat, and when it simmers add the oats, turn the heat to low and wait until your porridge thickens. When you’re happy with the texture, transfer the mixture to a bowl, add some toppings,your sweetner of choice et voila, you can now enjoy the heavenly autumnal breakfast and start a new day!
